Fresh Blueberry Crumble – the best way to make use of those Summer time fruits! Simple and easy , scrumptious!

Yield: 24 – 28 bars

Ingredients For the crust and the crumble:

½ cup of raw granulated sugar
½ cup of brown sugar
1 tsp of baking powder
3 cups of flour
1 cup of full cream butter
1 large egg, beaten
½ teaspoon of vanilla

Ingredients for the filling:
4 cups of fresh organic blueberries
½ cup of raw granulated sugar
3 teaspoons of cornstarch


Pre-heat the oven to 375°F. Very lightly grease a 9 x1 3 inch baking pan with oil or butter and then put aside.

Begin by preparing the crumble and crust – Using a large bowl, mix both of the sugars, the baking powder along with the all-purpose flour. By working with a cutter, carefully cut in the full cream butter, the egg along with the vanilla until the mix is properly blended and looks like coarse crumbs. Press one half of the mix into the base of the ready prepared pan.

Using a different bowl, mix every one of the filling ingredients. Blend carefully. Spread the blueberry mix equally on the crust. Crumble the rest of the dough on top of the blueberries.

Bake in the oven for about 45 minutes or till the top is very lightly browned. Take out from the oven and permit to cool down fully prior to slicing.

This serves very nicely with your favorite ice cream.
