Healthy Oatmeal Peanut Butter  Bars

I just love oats and peanut butter so when you combine the two of them together its got to be the perfect combination for me. Add a bit of chocolate (you know chocolate is a vegetable 😉 So we cant go wrong there) and you have a perfect treat. Soft, chewy oatmeal peanut butter  bars are packed with  wholesome, wholesome ingredients. The dark chocolate is actually optional.

Yield: 12-16 bars,

Healthy Oatmeal Peanut Butter  Bars Ingredients:

1/2 cup of raw  brown sugar
1 cup of chunky or creamy peanut butter
2 tsp of vanilla extract
1 cup of  whole-wheat flour
1 cup of organic  rolled oats
1 tsp of baking soda
1/4 tsp of sea salt
1/2 cup of whole milk (I made use of soy milk, however make use of whatever you like)
1/2 cup of chocolate chips
1/2 cup of raisins (or whatever mix ins you desire – i like to add goji berries and apricots)

Healthy Oatmeal Peanut Butter  Bars Directions:

Pre-heat the oven to 350F degrees. Line a clean 8 x 8 baking dish with some parchment paper. Put aside.

Using an electric mixer or a stand mixer equipped along with a paddle accessory, combine the raw brown sugar along with the peanut butter using a medium speed until the mixture is light colored as well as fluffy, around Three minutes. Add the vanilla and mix, scraping the sides as required.

Using a medium speed, include the flour, the rolled oats, the sea salt, along with the baking soda. The dough should be quite thick as well as clumpy, however it will all come together. Gradually add in the whole milk using a constant stream, blending until a dough starts to take shape. Add in the dark chocolate chips along with the raisins. Make use of your hands to ensure everything’s mixed, as required.
