No Bake Gluten Free Fudge Cookies
This one is another example of how you can create a really tasty treat without baking and with gluten. These are also really quick to make so give them a try!
Yield: 15 cookies
No Bake Gluten Free Fudge Cookies Ingredients:
1/2 cup of raw honey
1/4 cup of cocoa powder, unsweetened
1/4 cup of butter or coconut oil
1/2 cup of peanut butter (crunchy or creamy)
1/4 tsp of sea salt
1 cup of sunflower seeds
1 and 1/4 cup of peanuts, chopped
No Bake Gluten Free Fudge Cookies Directions:
Line a medium cookie sheet using some parchment paper. Put aside.
Using a medium saucepan over a medium heat, mix the raw honey, the cocoa powder, and the coconut oil (or butter). Blend until all of the ingredients are melted. The mix will be really thick. Let it boil for around One minute. Take away from the heat and then mix in the peanut butter and the sea salt till totally smooth.
Include the sunflower seeds along with the peanuts, blending very well to ensure all is actually covered with the peanutbutter/chocolate mixture. With a table spoon, drop mix directly into modest heaps on a prepared cooking sheet. I calculated approximately 1.5 Tbsp of “dough” each one, to produce 15 cookies. Create them as small or big as you like.
Shift cookies to the fridge and permit to set, around 1 hour. Serve cookies right away to prevent the chocolate from melting. Keep the cookies inside the fridge for as much as 1 week.
